Late last year and for the first half of this year I was fortunate enough to be asked to work on a project by an ambitious and motivated friend of mine. She is Puerto Rican, as well as vegan, and is in the process of starting Casa Coqui, a Puerto Rican restaurant chain that is completely vegan and gluten-free. I did work on some menu development, but most of my involvement was in food styling and photography of this insanely delicious food.
